Strawberry Pizza

I love strawberries! So of course this recipe looked like a good one to try and it was. I really liked the strawberry sauce.

Crust:
6 Tbsp butter, softened
1/2 cup sugar
1 egg
1/2 tsp vanilla
1/4 tsp almond extract
1 1/4 cups flour
1/2 tsp baking powder
1/2 tsp salt
Cream butter and sugar. Beat in egg and vanilla. Stir in dry ingredients. Cover and chill for at least 1 hour. Roll out or pat into a 12-13" circle on a greased cookie sheet. Bake at 350 for 18-20 minutes or till lightly browned. Cool completely.
Filling:
4 cups sliced strawberries
1 cup sugar
2 Tbsp cornstarch
8oz cream cheese (I used light)
1/2-3/4 cup powdered sugar
1 tsp vanilla
Combine berries and 1 cup sugar and let sit at room temperature for 1 to 2 hours or until sugar is totally dissolved and turned to juice. Drain all of the juice from the berries into a medium saucepan. Slowly whisk the cornstarch into the liquid. Whisk till smooth. Bring to a boil, stirring constantly. Boil for at least 2 minutes, or until thickened. Cool and fold in the sliced berries.
Beat the cream cheese, powdered sugar, and vanilla till smooth. Spread over the crust. Top with the berry mixture.
Tips:-Make sure you let the berries sit until you have at least 1/2 cup of juice, more is better. If the mixture is too thick, you can add a little water or orange juice.-You can add lemon zest to the crust and cream cheese filling for a nice fresh citrus flavor if you like.

Strawberry Shortcake Crumb Muffins

I made these for a dessert. They were really good.

Recipe from: Ice Cream Before Dinner

Ingredients:

1 3/4 C all purpose flour
1/4 C cornstarch
1/2 C sugar
2 tsp baking powder
1/2 tsp salt
1 C buttermilk
1 egg
1/2 tsp vanilla
1/4 C butter, melted
10 strawberries, washed, dried & sliced


Crumb Topping:

3/4 stick unsalted butter, melted
1/4 C packed light brown sugar
1/4 C granulated white sugar
1/4 tsp cinnamon
1 C + 1 tblspn flour (+extra if needed)


Muffins: 1. Grease & flour a standard muffin/cupcake pan. Preheat the oven to 425F.2. Whisk together flour, cornstarch, sugar, baking powder & salt, & set aside. In another small bowl combine the melted butter, buttermilk, vanilla & beaten egg. Stir in to the flour mixture. Stir just to incorporate, do not overmix - it will be lumpy.3. Pour into the muffin pan, filling each cup about 2/3 full. Gently insert the strawberry slices into the batter so that they are vertical (they will stand up and down in the batter).Sprinkle with crumb topping. 4. Bake 15 - 18 minutes, or until the crumb topping is browned, and a toothpick inserted into the muffin comes out clean with only moist crumbs.Crumb:1. Whisk together the butter, sugars, cinnamon and salt until smooth.2. Stir in the flour with a whisk, then stir with a butter knife to create the crumbly texture. Add more flour as needed to create the correct crumb size.3. Sprinkle on to muffin tops - crumb topping with dry up and crisp in the oven.

Snickerdoodle Cookies

This is my new favorite recipe for snickerdoodles. The title caught my attention: it claimed to be the Best and now I will use this recipe instead of the one that I had. After trying these, Kyla said these are her "favorite" cookie.

Recipe from: Erika's Sweet Tooth

1 c. butter , (2 sticks) softened
1 c. sugar
2/3 c. brown sugar
2 eggs
1 tsp. vanilla
3 c. flour
1/2 tsp. salt
1 tsp. baking soda
1/2 tsp. cream of tartar

Topping
4 Tbls. sugar
2 tsp. cinnamon

In a mixing bowl, cream together the butter and sugars on high. Add the egg and vanilla and beat until smooth. In another bowl, combine the flour, salt, baking soda and cream of tartar. Pour the dry ingredients into the wet ingredients and mix well. Let the dough rest for 30-60 minutes in the refrigerator. Preheat the oven to 300 degrees. In a small bowl combine the sugar with the cinnamon for the topping. Take about 2 1/2 tbls. of the dough and roll it into a ball. Roll this dough in the cinnamon/sugar mixture and press it onto an ungreased cookie sheet. Repeat for the remaining cookies. Bake the cookies for 12-14 minutes. Cookies may seem undercooked, but believe me they won't be. It will just be a softer cookie! Let the cookies cool on a cooling rack. Enjoy!

Whole Wheat Muffins

I got this recipe from our provident living group. They are really good and my kids all love them, which is an added bonus.



½ c butter (I usually substitute 1/2 cup applesauce for the butter)
1 c brown sugar
1 egg
2 c whole wheat flour (fresh ground is best)
1 tsp soda
¼ tsp vanilla
1 c milk



Cream butter and sugar. Add egg. Add milk and flour alternately. Put in prepared muffins tins. Bake at 425 for 12 to 15 minutes.

*Makes 1 dozen

Dolly Madison Double Chocolate Muffins

Chocolate and muffins....yum! The boys really enjoyed these.

Recipe from: cdkitchen

1 package Chocolate Fudge Cake Mix
1 small box Chocolate Instant Pudding
3/4 cup Water
4 Eggs Beaten
1/2 cup Vegetable Oil
1 cup Mini Chocolate Chips (I used regular chips, 1/2 cup semi sweet, 1/2 cup milk)
1/4 teaspoon Almond Extract

Directions:
Mix cake mix, pudding, water, eggs, oil, and almond extract until smooth. Stir in chocolate chips last, blend through. Fill muffin cups 3/4 full and bake in preheated oven at 350degrees between 15-20 minutes until done, but do not over cook. This will depend on the size of the muffin cups.

I got 24 muffins.

Macaroni & Cheese

I tried this out, mainly for the kids. Although John and I thought it was the best recipe for homemade mac and cheese, the kids did not like it, so it will not be a regular at our house. I am saving the recipe though b/c if I were to make the homemade version this would be it. My kids are just not going to eat any except the blue box...picky little things!

1 pkg elbow macaroni
1/2 c. butter
1/3 BIG block Velveeta, cut into little cubes
1 1/2 - 2 c. shredded cheddar cheese
1/2 c. milk (or to taste)
salt & pepper to taste

Cook macaroni according to package directions (al dente) in salted water.Drain pasta. Melt butter in pan, then return to pot with melted butter on low heat. Add cheeses and milk. Keep stirring until cheese is melted. If it is too thick, add more milk.. if it's too thin, add more cheese. You want it to be the consistency of the Blue Box stuff. Add salt and pepper. Stir well and serve immediately.

Creamy Scrambled Eggs For a Crowd

These were actually really good and really easy, but not so healthy with added cream cheese :) I cut this recipe in half and it still made a lot so it's definetly for a crowd!

16 large eggs
1 (8 ounce) package cream cheese, softened
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 cups milk

Directions
1Whisk together all the ingredients in a large microwave-safe bowl.
2Microwage on high for 2 minutes Remove from the microwave and stir.
3Microwave for 1-2 minutes more, then stir.
4Repeat the process until the eggs are set but still moist, about 8 minutes total.
5Serve hot.

*I did sprinkle in just a little cheddar cheese at the end.

Apple Cinnamon Sugar Donut Muffins

For my cinnamon and apple loving kids....I had to try this and it was very good! Nathan wasn't a big fan, but the other 2 kids gobbled them up!

Recipe from: Barbara Bakes

3/4 cup sugar
1 large egg
1 1/2 cups all purpose flour
2 tsp baking power
1/4 tsp salt
1/4 tsp ground cinnamon
1/4 cup vegetable oil
3/4 cup milk
1 tsp vanilla extract
1 large apple, grated

Topping:
2 tbsp butter, melted
1/4 cup sugar
2 teaspoons cinnamon

1. Preheat oven to 350F. Lightly grease a muffin tin with cooking spray or vegetable oil.
2. In a large bowl, beat together sugar and egg until light in color. Add in vegetable oil, milk and vanilla extract.
3. In a small bowl, whisk together flour, baking powder, salt and cinnamon. Add to egg mixture and stir to combine. Stir in grated apples.
4. Divide batter evenly into 12 muffin cups, filling each about 3/4 full.
5. Bake for 15-18 minutes, until a tester inserted into the center comes out clean.
6. While muffins are baking, melt butter in a small bowl in the microwave. In another small bowl, combine remaining sugar and cinnamon.
7. When muffins are done, dip muffin top in melted butter, the immediately dip in cinnamon sugar mixture.Cool on a wire rack.
8. Makes 12 regular muffins.
