Potato Rolls

These rolls were super moist! We really liked them....

Recipe adapted from:

4 to 5 cups all-purpose flour
1 Tbsp. yeast
1 1/2 cups water (105 to 115 F)
1/2 cup mashed potatoes
1/3 cup butter, melted
1/4 cup sugar
1 teaspoon salt

Mix warm water and yeast. Let sit for a minute. Add melted butter, sugar, salt and mashed potatoes. Mix well. Add flour one cup at a time and knead in mixer.

Let dough rise 1 hour or until doubled in size.

Shape into 12 rolls. Let rise until doubled again...around 45 minutes. Bake 350 until golden brown.
