Whole Wheat Muffins

I got this recipe from our provident living group. They are really good and my kids all love them, which is an added bonus.



½ c butter (I usually substitute 1/2 cup applesauce for the butter)
1 c brown sugar
1 egg
2 c whole wheat flour (fresh ground is best)
1 tsp soda
¼ tsp vanilla
1 c milk



Cream butter and sugar. Add egg. Add milk and flour alternately. Put in prepared muffins tins. Bake at 425 for 12 to 15 minutes.

*Makes 1 dozen
