Bruschetta Chicken Bake

Something new on the menu tonight:

1 can diced tomatoes, undrained
1 pkg. stove top stuffing mix for chicken
1/2 cup water
2 cloves garlic, minced
1/2 lb. boneless, skinless chicken breasts, cut into bite sized pieces.
1 tsp. dried basil leaves
1 cup mozzarella cheese

Preheat oven to 400. Mix tomatoes, stuffing mix, water and garlic just until moistened.
Layer: chicken, basil, cheese, stuffing mix, cheese in baking dish
Bake 30 minutes or until chicken is cooked through.

*We might try marinating the meat next time with some sun-dried tomato vinaigrette, it was just a tad bit dry.
